Orange Marmalade Muffins #MuffinMonday

Pump up the orange flavor in these muffins by adding a little tangerine or orange zest to your granulated sugar before mixing in the other dry ingredients.


Any good cookbook I've ever read always suggests reading the recipe through before starting to cook or bake. Wise advice for sure so I do try to comply. In the case of muffins, I've been baking them so long and so often that I make up my own recipes with ease.

I sit at my computer before heading into the kitchen. For 12 muffins, 2 cups of flour is about right. Are they going to be sweet muffins? Well then, I add some white sugar, brown sugar or honey or even jam (or a combination) to the ingredients list. What will I use to moisten the dry ingredients? Milk, melted butter, oil, yogurt, buttermilk? How many eggs? Usually one will do. Don't forget a leavening agent and salt. Even a sweet muffin needs some salt.

Finally, or sometimes initially, to be honest, what add-ins or flavorings will I use? Fruit in season, chopped candy bars or maybe leftover meat and cheese in the fridge. Any of these might motivate me to create a muffin recipe. This morning my inspiration came from a jar of homemade orange marmalade I bought at a weekend market a couple of years ago. It's been languishing, still sealed, in the cool pantry ever since, slightly darker than when I bought it but just as good.



The one thing I had not considered was a muffin pan. Much to my horror, I realized that I don't have one in the house I'm staying in right now! I was saved when I came across a set of 12 silicone muffin cups tucked into a kitchen drawer. That was close. It's also why my very first instruction for Muffin Monday recipes is to prepare your pan! Better to know before you start if job one is actually to go buy a muffin pan (or silicone cups.)

Orange Marmalade Muffins

Pump up the orange flavor in these muffins by adding a little tangerine or orange zest to your granulated sugar before mixing in the other dry ingredients.

Ingredients
2/3 cup or 132g sugar
Zest 1 small tangerine, minced or finely grated
2 cups or 250g flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup or 113g butter, melted and cooled
1/2 cup or 120g plain yogurt
1/2 cup or 120ml milk
1/4 cup or 60ml good quality marmalade
1 large egg

Optional glaze:  2 tablespoons marmalade, slightly warmed

Method
Preheat your oven to 350°F or 180°C and prepare your 12-cup muffin tin by greasing it or lining it with paper muffin cups. Or use silicone cups on a baking pan! These little miracles allow one to bake muffins, even if you actually don't own a muffin pan in your current location.

In a large bowl, rub your sugar with the tangerine zest to release the oils. I use the back of my silicone spoon against the bowl.



Add the flour, baking powder, baking soda and salt to the sugar bowl and whisk to combine.

In another smaller bowl, whisk together your melted butter, milk, yogurt, egg and marmalade.

Check out the gorgeous color of my butter, there on the left. All natural, from Jersey Dairy, made with the rich cream from Jersey cows. 


Pour your egg/milk mixture into your dry ingredients and fold until just combined.



Divide the muffin batter between the muffin cups.



Bake in your preheated oven for about 20-25 minutes or until a toothpick comes out clean.

Remove from the oven and allow to cool for a few minutes. Warm the extra marmalade briefly in the microwave and then brush it onto the muffins to glaze.

Remove the muffins from the pan (or silicone cups) and cool completely on a wire rack.

Bananas Foster Monkey Bread #BreadBakers

Bananas Foster is a special dessert that was created and served first, table-side, at Brennan’s in New Orleans. About five years ago, I made Bananas Foster Muffins for a special Muffin Monday, just as we moved in Dubai because that was kind of a special occasion.

Today is the exact anniversary of our arrival, which is what made me think of Bananas Foster again for this month’s Bread Bakers theme of pull apart breads. After all, most monkey breads have sugar and cinnamon. Some have a sticky toffee or caramel glaze. Bananas Foster sauce has the added bonus of rum, perfect for a celebration.

The dough is adapted from the King Arthur Flour monkey bread recipe.

Bananas Foster Monkey Bread


Ingredients
For the bread dough:
1/2 cup or 120ml lukewarm water
1 tablespoon canola oil
1 large egg
1 teaspoon salt
1 tablespoon sugar
2 teaspoons instant yeast
2 cups or 250g flour

For the Bananas Foster sauce:
2 medium bananas
6 tablespoons or 85g butter, plus more for buttering the pan
1 cup or 200g dark brown sugar
1 teaspoon cinnamon
3 tablespoons rum

To assemble the bananas foster monkey bread: 1 cup or 125g chopped pecans

Method
To make the dough, put your sugar, yeast and warm water in your mixing bowl. Leave to prove for a few minutes. When the bubbles begin forming, mix in oil, egg and salt.


Add 1 cup or 125g of the flour, stirring to blend. Add in the rest of the flour, mixing well. Let the dough rest for 5 minutes.


Knead the dough by hand or machine until it is stretchy and smooth. Form the dough into a ball and lightly grease your mixing bowl. Put the dough ball in the greased bowl and cover the bowl with cling film.

Leave in a warm place for 30 minutes or until the dough has doubled in size.


While the dough is rising, you can make your bananas Foster sauce.

Cut your bananas into about 1/2 in or 1 cm slices.

Combine the butter, brown sugar, and cinnamon for the sauce in a skillet. Place the pan on a low heat, and cook, stirring, until the brown sugar dissolves. Add the bananas to the pan.


Turn the heat up a little, until the melted sugar is bubbling slowly. When the banana sections soften, carefully add the rum.


Tip the pan slightly so the rum vapor will ignite. It’s a little scary and happens quite suddenly so do be prepared. The flame burns off the alcohol and also helps thicken the sauce.

Remove from the heat. Set aside and allow to cool. This makes about 1 3/4 cups or 414ml of sauce. We are going to use about 1 1/4 cups or 295ml in the monkey bread and save the balance for pouring on the bread when it’s served.

Thoroughly grease a 10 or 12-cup nonstick Bundt pan with butter and sprinkle in a small handful of the chopped pecans. Set aside a handful of the pecan for decorating the bread after it bakes.


Once the first rise of the dough is finished, tip the dough out onto a lightly floured surface. Press it down gently then cut the dough into about 20-23 balls.



Drizzle some of the bananas foster sauce into the bottom of the Bundt pan.


Add in about 8 or 9 dough balls. Top with more sauce then a sprinkle of pecans.


Add more dough balls, then more sauce and more pecans, until the dough balls are all used.

Cover the pan with cling film and leave in a warm place for 45 minutes or until the bread has doubled.

When rising time is almost up, preheat your oven to 350°F or 180°C. Remove the cling film and bake the bread for 25 minutes.

Remove the bread from the oven.

Turn it out onto a serving pan, scraping any sticky topping left behind in the pan and spooning it onto the bread.

Warm the remaining sauce if it’s not pourable anymore and then drizzle it over the monkey bread. Top with reserved pecans.

Chocolate Pumpkin Swirl Muffins #MuffinMonday

I tend to be one of those people who resist cooking and baking with pumpkin until I can feel coolness in the air. Unfortunately, I keep forgetting that that just doesn’t happen in Dubai until autumn is pretty much over, calendar-wise.

But when it gets to be October and almost November, I guess it’s time!

Chocolate Pumpkin Swirl Muffins


If you are throwing a Halloween party, you’ll want to mix up a batch of these. The dark chocolate swirl and the orange pumpkin batter will be a hit on your holiday table.

Ingredients
1 1/2 cups or 190g all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup or 200g sugar
1/2 15 oz can or almost one cup or 200g pure pumpkin (not pumpkin pie filling)
2 eggs
1/4 cup or 60ml canola oil
1/4 cup or 60ml orange juice
4 1/4 oz or 120g 70% cocoa dark chocolate (I like Lindt.)

Method
Preheat your oven to 350°F or 180°C and prepare your 12-cup muffin pan by greasing it thoroughly, spraying with non-stick spray or lining it with paper muffin cups.

Melt your chocolate gently the microwave with a few short bursts of 10-15 seconds at a time, stirring in between.


In a large bowl, mix together the flour, baking powder, baking soda, salt and sugar and stir well.

In another bowl, whisk together the pumpkin, oil, orange juice and eggs.


Pour your wet ingredients into the dry ingredients and fold them together until just mixed.


Pour about two-thirds of the melted chocolate on top of the batter and use a spoon to fold it in so there are still pockets of chocolate, in and around the pumpkin batter.


Divide the batter evenly among the muffin cups.


Use a small spoon to divide the remaining chocolate to top the batter in the muffin cups. Use a toothpick to swirl that chocolate into the top of the batter.

Cool for a few minutes and then remove the muffins and put on a rack to cool completely.

Word of warning: Depending on the temperature of your kitchen (still pretty hot here in Dubai!) the chocolate may come off a little onto your fingers as you handle the muffins. Lick it off and carry on. In a colder kitchen, the chocolate should set.

Sincere Pumpkin Patch Spicy Cheese Ball

Extra sharp cheddar and cream cheese can be flavored with a variety of herbs and spices and rolled up ball- or log-shaped for a savory appetizer that will be a welcome addition to any party table. For added interest, roll your cheese ball in chopped pecans or walnuts.

If you’ve been reading along for a while, you might have noticed something.  I didn’t have a single Halloween post until last week’s Muffin Monday.  It’s not that I don’t enjoy Halloween.  In fact, as I mentioned a few weeks ago, when my girls were little, I was chief organizer and instigator of Halloween celebrations in our little neighborhood in the small oilfield town of Macaé, Brazil.

When we lived in Kuala Lumpur, we took part in trick-or-treating by joining another neighborhood’s festivities since no one went door-to-door in our mostly local area.  We parked on the route, decorated the trunk of our car and gave out candy.  But since the girls left home for university and I started the blog, my Halloween decorating and baking has dropped off significantly, although I still join my friends to give out candy if I happen to be in KL for Halloween.  It’s such fun to see the children in costumes.

This week’s Sunday Supper theme is Halloween Finger Foods and since I don’t have little ones at home, I decided to go savory instead of sweet by making a spicy cheese ball that would be a great addition to any Halloween party table.  Goodness knows there will be enough candy already.

Like Linus from the comic strip Peanuts, I like to think that the Great Pumpkin will come to the most sincere pumpkin patch (or buffet table) and bring gifts for everyone.  He might even be tempted by this cheese ball.  It is most sincerely cheesy.

Ingredients
13 1/4 oz or 375g extra-sharp orange cheddar cheese
8 oz or about 225g cream cheese, at room temperature
1 small bunch chives (Mine was about 1/2 oz or 15g)
1 jalapeño (Mine was about 3/4 oz or 20g)
1 clove garlic
1 teaspoon smoked paprika plus extra for decorating, if desired
2 tablespoons plain yogurt

For decoration: One broccoli stalk - with leaves, if possible
To serve: Crackers of your choice or bread

Method
Grate your cheddar cheese into a large mixing bowl. Finely mince your chives and garlic. Cut the stem end off of the jalapeño and remove the seeds, if you want to add just a little spice. If you like spicy food, by all means, leave the seeds in. Mince the jalapeño finely.



Add the softened cream cheese, the chives, garlic, jalapeño, smoked paprika and plain yogurt to the cheddar cheese.


Mix thoroughly with a wooden spoon.



Line a small round bowl with cling film and heap the cheese mixture in it.  Press down with a spatula so the cheese fills the bottom of the lined bowl completely. Cover with the cling film and round out the top with your hands.  It’s like playing with Play-Do again.


Set the covered cheese ball in the refrigerator for several hours so it will stiffen back up.  I ended up leaving mine overnight because I got busy with other projects.

Remove the cheese ball from the bowl but leave it covered with the cling film.  Press the ball into a pumpkin-like shape.  Remember that pumpkins come in all shapes and sizes so don’t get too hung up on complete roundness or perfection.

Use your thumb to make grooves in the ball from top to bottom.



When you are satisfied that it looks like the best pumpkin you can manage, unwrap the cling film and use a soft paint brush to brush a little smoked paprika in the grooves to enhance the look.


Cut the stem off your broccoli, keeping a couple of leaves attached, if possible.  Cut what will be the top of your pumpkin stem at an angle.  Set the stem on top of your cheese pumpkin ball and push it in just a little.   Is that not the cutest thing!?



Serve with crackers or bread, and don’t forget to put out a knife so that folks can cut a piece off and spread the cheese ball.
