Blossom Tea Honey Buns #BreadBakers

Made with a fragrant tea mix of hibiscus, rose and orange blossoms, paired with ginger and apple, these blossom tea honey buns have a subtle floral note that goes excellently with a hot cup of tea.

For these blossom tea honey buns, I used a Tiesta tea  that my grocery store called Ginger Sweet Peach, despite the complete lack of peaches in the mix. You can use your favorite fruit infusion to make these buns.

Yesterday for Mother’s Day we hosted a backyard cookout. The menu included chicken, sausage and pork ribs, along with two substantial salads, garlic bread and my world-famous lentil burgers for the vegetarian contingent. My lentil burger recipe calls for 1 cup or 210g of uncooked lentils, which usually means buying a box or bag and dealing with leftovers.

Now that I’m back in the States, I am discovering the joys of the self-serve  bulk food department of my neighborhood stores. Not that we didn’t have bulk foods in Dubai, but I wasn’t allowed to help myself. It’s such fun to use the little scoop and measure out just how much I need for a recipe. I was able to buy exactly 210g of French lentils and now I don’t have a box in the cupboard with leftovers that are never enough for another recipe.

Another bonus of the bulk foods is the fabulous mix of teas and infusions available. They all sound and smell wonderful but I especially love the ones with ginger.

Blossom Tea Honey Buns

For these blossom tea honey buns, I used a Tiesta tea that my grocery store called Ginger Sweet Peach, despite the complete lack of peaches in the mix. You can use your favorite fruit infusion to make these buns.

Ingredients
2 tablespoons blossom tea or your favorite mix
2 tablespoons butter, melted and cooled
1/4 cup or 60ml honey
1/4 cup or 50g white sugar
1 teaspoon salt
1 envelope (1/4 oz or 7g) active dry yeast
2 3/4 cup or 350g bread flour
1 cup or 110g whole grain rolled oats

1 egg, beaten, for brushing on buns before baking
Optional for decoration: honey and extra tea leaves

Method
First, brew your tea by adding 1 1/4 cups of boiling water to the tea mix. Steep for 5 minutes then strain and discard the tea mix. Check out that gorgeous color!

Add in the honey and butter and stir till the honey is dissolved.

Mix white sugar and yeast in a large bowl. When the liquid has cooled to a lukewarm temperature, add it to bowl containing the sugar and yeast. Leave to prove for a few minutes.

When the yeast starts to foam, mix in the flour, oats and salt.



Knead until you have a smooth dough ball. This is a soft dough but don’t be tempted to add more flour. The rolled oats will need that moisture as the dough is kneaded and then rises.

Place the dough ball in an oiled bowl and cover with cling film. Put it in a warm place to rise until doubled, about 45 minutes.



Divide and form the dough into 10 balls and place them on a baking pan lined with baking parchment. Make sure to leave some space for rising. Since our theme is flowers, I made a last minute decision to make a larger bun out of two balls of dough so I could lay them out in a flower shape. So, as you can see in the photos, I only made nine buns out of mine.

Cover the bun pan with a proofing bag or clean garbage bag. Leave to the buns to rise for 30 more minutes.

When dough has almost finished rising, preheat your oven to 350°F or 180°C. Brush the tops of the buns with beaten egg.



Bake for 17-20 minutes or until tops are golden brown, turning your pan around halfway through so they will brown evenly. Remove the buns from the oven.

Optional: While the buns are still warm, brush them with some honey and sprinkle with a few tea leaves for decoration.

Cranberry Sweet Rolls #BreadBakers

Cranberries are the darling of this season, showing up in savory and sweet recipes. (For those of us who can't get Florida Strawberries!) They add both sweetness and a welcome tart bite to these cranberry sweet rolls. Perfect for Christmas morning. Or any morning, really.


If you’ve been reading this space for a while, you might remember that I started Bread Bakers with my friend and fellow blogger Renee at Magnolia Days in September of 2014. As a group, we've been baking bread and growing like a good sourdough starter ever since. Twelve bakers took part in that first group event. This month, more than two years on, we have 16 delicious sweet yeast breads to share with you. Some months we’ve had 29 or 30 but I’m happy with 20 in a busy month like December.

Part of our Bread Bakers blurb talks about members taking turns choosing the theme or main ingredient and hosting the event each month. Because everyone is so willing to step forward, I haven’t actually hosted for ages, just played a supporting role to whoever was in charge. This month I’m stepping in to host! Our theme was chosen by Laura of Baking in Pyjamas who unfortunately had to drop out this month. I am delighted to fill in.

My cranberry sweet rolls are a seasonal take on cinnamon rolls, but with a buttery enriched dough and homemade cranberry filling. Make sure to follow my instructions to set aside a little of the filling for topping as well. That bright red on top makes them even more festive. If you want to enjoy these freshly baked for breakfast, follow the alternative instructions for the second proofing.

Ingredients
For the enriched dough:
1/2 cup or 120ml warm water
2 tablespoons sugar
1 envelope fast-acting yeast (1/4 oz or 7g)
1 1/2 cups or 190g all-purpose flour, plus extra for rolling out the dough
1/2 teaspoon salt
1/4 cup or 57g butter, very soft but not melted

For the filling:
3/4 cup or 150g sugar
1/4 cup or 60ml water
1/4 cup or 60ml fresh orange juice
Zest of 1/2 orange (save other half for decoration)
2 cups or 210g fresh or frozen cranberries

For the glaze:
3/4 cup or 95g powdered sugar, sifted
3-4 teaspoons milk

Method
Make the filling first so it has time to cool:
In a large saucepan, bring sugar, water, orange juice and cranberries to a boil. Cook, uncovered, until cranberries begin to pop, just a few minutes. Reduce heat; simmer 15 minutes longer or until thickened, stirring occasionally. Stir in orange zest; cover and set aside to cool.



Line the bottom of an 9 in or 23cm round baking pan with baking parchment.

To make the dough: Place the water, sugar, and yeast in the bowl of a stand mixer fitted with the paddle attachment. Let the mixture rest for a few minutes to activate the yeast.

Add in the flour and salt. Mix well until a soft dough forms. Keep your mixer on medium speed and add in the butter a tablespoon or so at a time, mixing until the butter is incorporated each time.



Cover the bowl with some cling film or a damp towel and set aside to rest for 15 minutes. With rapid rise yeast, this rest takes the place of the first full proofing. This quite a soft dough.


On a lightly floured work surface, roll out the dough to a rectangle about 12x15in or 31x38cm.



Spread all but about 1/4 cup or 75g of the filling on the dough rectangle, going all the way to the sides but leaving a bit empty at the end. Save the balance for decoration.



Roll the dough up as tightly as you can manage, jellyroll style, ending at the empty end so it can seal itself as you finish the roll. Cut the roll into six equal pieces.



Place the cut rolls into your prepared pan.

Cover with cling film and set in a warm place to rise for 45 minutes to 1 hour, or until doubled in size. (Alternatively, if you want to bake fresh for breakfast in the morning, you can now put the sweet rolls in the refrigerator to rise more slowly overnight. Take them out in the next day and put them in a warm place while you preheat your oven.)



When the last rise time is almost up, preheat your oven to 350°F or 180°C.

Bake for about 25-30 minutes or until the tops are golden.



Remove from the oven and leave to cool before adding the glaze.

To make the glaze, add the milk by teaspoons to the powdered sugar, stirring well in between, until you reach a good drizzling consistency.

Drizzle the glaze over the cooled cranberry sweet rolls. Add dollops of the reserved cranberry filling in between. Sprinkle with the remaining orange zest.

Apricot Kolaches #BreadBakers

Kolaches are a Texas breakfast treat that can be either savory, think sausage and cheese or sweet, usually with a fruit filling. The filling in these apricot kolaches isn’t traditional but they are delicious. 

Houston has a homegrown doughnut chain called Shipley Do-Nuts, one location mere minutes from our house there. It’s a treat to go early in the morning and get a dozen of their hot glazed doughnuts, fresh out of the fryer. The place smells of sweet sugar and fresh coffee and since there’s no place to sit and eat, folks are lined up to place their orders to go. They even have a drive-through. This is Houston, after all. Everyone drives everywhere. And since it’s also Texas, Shipley's makes kolaches. My personal favorite is jalapeño sausage with cheese. Divine.

So why are kolaches typical in Texas? There are many towns and rural areas where folks from Czechoslovakia came to settle during the mid- to late 19th century. Along with their devotion to the Catholic Church, strong work ethic and love of polka music, they brought their kolache making tradition. If you are ever headed to Texas, make sure to check the events calendar for a Czech Fest. Taking place in several towns, the fun starts on Labor Day weekend with the biggest, Westfest. While many of the Czech fests include a kolache baking contest, they all have polka bands and you will be required drink cold beer and get up and dance. It’s a rule.

This month’s Bread Bakers challenge is to use stone fruit like cherries, peaches, nectarines, mangoes and the like. Problem is, except for mangoes, the stone fruit that is imported to Dubai never really smells or tastes of properly ripened summer fruit. Traditional fruit kolaches have a cooked fruit filling in a sweetened yeast dough so I could have made do. After all, every fruit is sweet if you cook it down with sugar. I decided to use canned apricot halves and leave them whole instead. Just because I think they are pretty that way.

The dough divides nicely into 18 pieces, but my can of apricots was short one half. No problem, I filled that final kolac (<that’s the singular) with some homemade preserves, in this case, fig. You could actually do the same with all of your kolaches if you can't be bothered to make filling.

This recipe calls for chilling the dough in the refrigerator overnight so start one day ahead of when you’d like to serve these kolaches. This is ideal since then they can be fresh baked for breakfast.

Ingredients for 18 kolaches
For the apricot filling:
1 can apricot halves (net wt. 410g, drained wt. 240g) in syrup
1/4 cup or sugar, or more to taste
1 tablespoon unsalted butter
1/4 teaspoon salt

For the dough:
1 cup or 245g sour cream
1/2 cup or 100g sugar
1 1/2 teaspoons salt
1/2 cup or 113g butter, melted and cooled, plus more for buttering the dough bowl
2 teaspoons instant yeast OR 1 packet active dry yeast
1/2 cup or 120ml lukewarm water
2 large eggs, at room temperature
4-5 cups or 510g strong white bread flour

For the crumb topping:
1/4 cup or 42g all-purpose flour
1/8 cup, firmly packed, or 25g brown sugar
1/8 cup or 25g granulated sugar
1 tablespoon unsalted butter

To assemble the kolaches:
≈ 2 tablespoons fine semolina

Method
Take your eggs and sour cream out of the refrigerator and leave them to come to close to room temperature.

Drain the apricot halves and put the syrup in a small pot. Lay the apricots out on some paper towels to dry.

Cook the syrup with the sugar over a medium low heat until the liquid has reduced to about 1/3 cup. Add in the butter and salt and stir well. Add in the apricot halves and set aside to cool. Once cool, the syrup turns into a kind of jelly. Refrigerate the apricots and jelly when the dough rests overnight.



Put the yeast in a large mixing bowl, or the bowl of your stand mixer. Add 1 tablespoon from the sugar for the dough and the warm water. Leave to proof for a few minutes.

Add the butter, sour cream, egg, sugar and salt into the mixing bowl. Beat until well combined.



Add in four cups or 385g of the bread flour and beat well. The dough will become quite thick but still very soft and sticky.

Use your bread hook to add in the last cup or 125g bread flour and knead for a few minutes. It's still going to be pretty soft and sticky but, fear not, it will be easy to handle once chilled.

Put the dough into a buttered bowl, cover with cling film and pop it in the refrigerator. Let it rest overnight.

When you are ready to bake the next morning, take the apricots and dough out of the refrigerator.

Cut the dough in half. Then cut each of those halves into three equal parts. Then divide the three parts into three more. This should give you 18 reasonably equal pieces of dough.



Line two baking sheets with parchment paper or silicone mats. Roll the dough pieces into small balls and place them evenly spaced on the lined baking sheets.



Cover the balls lightly with cling film and set in a warm, draft-free place to rest for 10 minutes.

Use your fingers and thumbs to press out an indentation in the middle of each ball that’s large enough for your apricot halves.



Sprinkle a healthy pinch of fine semolina – perhaps a 1/4 teaspoon – into each indentation.



Add about 1/2-3/4 a teaspoon of the jellied apricot syrup into each as well. Tuck a half apricot in on top of the jelly.



Combine the all-purpose flour, sugars and butter in a food processor and pulse until crumbly to make the crumble topping.



Sprinkle the crumble liberally on top of the apricots. Set the pans in a warm, draft free place for about 30 minutes.



When the resting time is almost up, preheat your oven to 350°F or 180°C.

Bake the kolaches in your preheated oven for about 20-25 minutes or until they are golden brown.

There's the fig preserves one, top right. 


Enjoy with a hot cup of coffee or tea. Polka music optional.
