Raspberry Yogurt Jam Muffins #MuffinMonday

I’ve been moving about the planet this month and somehow Muffin Monday snuck up on me! Whenever that happens, I know that I can flavor muffins with everyday ingredients that are typically in my refrigerator or pantry, like yogurt and jam. 

These were a hit with my taste testers although one did say that she’d rather I not brush the tops with extra jam because, while it was delicious on a warm muffin, her favorite part is the crunchy top once they cool. Sadly, the jam on top softens the crunchy top. Personally, I thought the jam glaze added a nice pop of extra flavor! You do you.

Raspberry Yogurt Jam Muffins

Feel free to substitute your favorite fruit yogurt flavor and jam if you don’t happen to have raspberry at hand. 

Ingredients
For the muffin batter:
2 cups or 250g flour
1/2 cup or 100g light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup or 120g sweetened raspberry yogurt
1/2 cup or 120ml milk
1/2 cup or 113g butter, melted and cooled
1/4 cup or 60ml raspberry jam
1 egg

For the glaze:
2 tablespoons raspberry jam - optional.

Method
Preheat your oven to 350°F or 180°C and prepare your 12-cup muffin tin by greasing it or lining it with paper muffin cups.

Whisk to combine your flour, brown sugar, baking powder, baking soda and salt in a large mixing bowl. 


In another smaller bowl, whisk together your milk, yogurt, jam, egg and melted butter.


Pour your egg/milk mixture into your dry ingredients and stir until just mixed.


Divide the muffin batter between the muffin cups.


Bake in your preheated oven for about 20-25 minutes or until a toothpick comes out clean.


Remove the muffins from the oven and allow to cool for a few minutes.  Brush the warm muffins with the extra jam to glaze, if using.


Remove the muffins and cool completely on a wire rack.

Creamy Avocado Yogurt Dip

This easy creamy avocado yogurt dip is both mellow and tart, with a hit of spice from the jalapeño and garlic. It’s perfect with veggies or chips!

The other night we were invited to a get-together of my oldest friends, by which I mean, to clarify, the group of friends I’ve been friends with the longest. We are all about the same age. Many of us have been friends since we were nine years old, others joined the gang later and some met even earlier in first grade. 

I wanted to contribute to the evening’s festivities so I made this dip and also baked a tropical Bundt cake. (Stay tuned for that recipe this Thursday.)

As we usually do, we told stories on each other and laughed so hard! It was one of the best nights we’ve enjoyed in a VERY long time. To my delight, this dip was a hit! I have to agree. It is GOOD. And so easy!

Creamy Avocado Yogurt Dip

This dip can be made earlier in the day you want to serve it but do cover the surface snugly with cling film so air can’t touch the top and refrigerate, if not serving immediately. I have no idea if that old wives' tale is true but I also saved the avocado pits and tucked them in there too.

Ingredients
1/2 cup or 122g Greek yogurt
2 fresh, just ripe avocados 
1 clove garlic
1 small fresh jalapeño
small bunch cilantro (see photo for guide, let's not get too hung up on size/weight here)
1 teaspoon cumin
1/4 teaspoon fine sea salt
Juice from half a lime (about 1 1/2 tablespoons)

Method
Smash and mince the garlic. Remove the stem and finely chop the jalapeño. You can remove the seeds if you don’t like things too spicy. I leave mine in. Remove the tough stems and roughly chop your cilantro.


Into the vessel of your food processor, add the yogurt.  Cut the avocados in half and remove the pits. Use a spoon to scoop the avocados into the food processor.


Add in the garlic, jalapeño, cilantro, cumin, salt and lime juice.


Whiz until smooth.

Enjoy with crudités or chips. We NEEDED potato chips that night. Don't judge. It's NOT guacamole, but this would also be good with tortilla chips. I bought black pepper and salt chips and they were awesome.

Greek Yogurt and Honey Cornbread Muffins #MuffinMonday

In Greek they call this flavor combo yiaourti me meli, or yogurt and honey. It’s delightful in these yogurt and honey cornbread muffins.

You can make these for breakfast because, like all muffins, they come together quickly and your family can eat them warm just half an hour from when you start measuring out your ingredients. Or serve them as a snack anytime of the day. 

My mom likes to cut the muffins in half and warm them on a skillet with pats of butter but honestly, I think they are perfect just as is, especially with a cup of hot coffee or a cold glass of milk. 

Greek Yogurt and Honey Cornbread Muffins

You can use white or yellow cornmeal for the muffin batter, whichever you have on hand, but the yellow cornmeal makes prettier muffins. 

Ingredients 
1 cup or 180g cornmeal 
1 cup or 125ml all-purpose flour
1/4 cup or 50g granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup or 245g whole yogurt
2 eggs
1/2 cup or 113g butter, melted
1/2 cup or 120ml honey
 
Method
Preheat your oven to 375°F or 190°C and grease your 12-cup muffin pan or line it with paper liners.

Mix your cornmeal, flour, sugar, baking powder,  salt and baking soda into a large bowl. 


In a medium-sized bowl, whisk together your yogurt, eggs, melted butter and honey.


Pour the wet ingredients into the dry ingredients and whisk to combine.  


Divide the batter evenly between your muffin cups.


Bake the muffins in your preheated oven for about 20 minutes or until they are a nice golden brown around the edges.  Allow to cool briefly and then remove the muffins to a rack.

These are delicious warm, plain or slathered with extra butter and/or honey. They are also fun to build pyramids with. I was just about giddy that Snowmageddon 2021 and freezing temperatures had finally passed though Texas. We got off easy with just a couple of broken pipes outside so I'm not complaining.
