Beef and Smoked Sausage Goulash (Instant Pot)

This flavorful beef and smoked sausage goulash is made in an Instant Pot, first up is the wonderfully rich meaty tomato sauce and then the (uncooked!) pasta is added. No fuss, no trouble, very delicious!

Growing up, goulash was one of my favorite meals.  Just a simple Bolognese sauce made with ground beef, mixed up with elbow macaroni. Kind of like Hamburger Helper but cooked from scratch. It was the perfect one-bowl kid food.

I’m not sure how this dish, so different from traditional Hungarian goulash got called by the same name, but speculation online is that they have beef and paprika in common and this version is properly called American goulash. I honestly don’t remember paprika in my mom’s dish though. All I know is that I loved it.

During our kitchen renovation a couple of months back, I was prepping and cooking in the laundry room on top of the dryer and washing machine, with a single hot plate, a slow cooker, an Instant Pot and a rice cooker. Meals got very creative in that small space!

From an appliance that I barely touched for the first four years that I owned it, my Instant Pot became my new best friend.

Beef and Smoked Sausage Goulash Instant Pot

If your family members don’t eat spicy foods, by all means substitute canned, diced tomatoes for the Ro-Tel, which comes in mild, original and hot. In any case, you can also use the store-brand equivalent. What I actually used this time, one of each:

Ingredients
For the sauce:
14 oz or 397g smoked sausage (Our favorite is Holmes Smokehouse with jalapeño)
1 medium onion, chopped finely
3 cloves garlic
2 tablespoons olive oil
2 1/2 lbs or 1134g ground beef
2 cans (10 oz or 238g each) Ro-Tel diced tomatoes or store brand equivalent
1 can (6 oz or 170g) tomato paste
3 tablespoons dried Italian herbs
2 bay leaves
8 oz or 225g mushrooms

For adding the pasta:
1 beef stock cube
1 teaspoon salt
1 teaspoon baking soda
1 lb or 450g mini penne or elbow noodles

Optional for serving:
Parmesan cheese, grated
Crushed red pepper
Fresh parsley

Method
Cut your smoked sausage into half moon slices. Peel and chop your onion finely and mince the cloves of garlic.



Set your Instant Pot on sauté and add the olive oil to the pot along with the sausage. Cook the sausage, stirring frequently so it doesn’t stick, until it’s well browned.



Add in the chopped onion and minced garlic and give the whole thing a good stir.

Sauté for a few minutes or until the onion and garlic are soft and translucent. Use a slotted spoon to remove them to a bowl and set aside.



Add the ground beef to the Instant Pot.

Sauté until the meat is cooked through and well browned, breaking it into crumbles as it cooks. Ideally, it will even be crunchy in places. Drain the cooked beef and discard the grease created as the beef and sausage cooked.

Trim any hard ends off of the mushroom stems and slice the rest. Add them to the Instant Pot along with the sausage, onions and garlic, Ro-Tel, tomato paste, Italian herbs and bay leaves.



Use the Ro-Tel can to measure and add 1 1/2 cans of water to the pot. Give it all a good stir.



Put the lid on the Instant Pot and set it for 30 minutes on normal. When it finishes cooking, safely release the steam by putting a folded dish towel over it and releasing slowly.



Crumble in the beef stock cube and add 2 cups or 480ml water to the pot. Stir well until the stock cube is dissolved. Add in the salt and baking soda. Finally, add the pasta to the pot and stir very well, making sure the pasta is well covered by the liquid.


Put the lid back on and set the Instant Pot for 4 minutes. Once it’s done, put your dishcloth over the vent again and do a quick release. Stir well and remove the bay leaves before serving.



Top with grated Parmesan and parsley, if desired. We also love a sprinkle of crushed red pepper.

Sweet Peach Cornbread #BreadBakers

Braving the queue, I wore my mask and stayed well apart from my fellow peach buyers, of course. Then I picked up 25 pounds of sweet Georgia peaches!

For the last couple of days we’ve been eating peaches straight over the kitchen sink because they are so juicy and sweet. I swear, it’s the only neat way to eat them. I’ve frozen them sliced with some sugar. I’ve made sweet jam and spicy jam and we still have about 25 peaches left!

Sweet Peach Cornbread

You should use fresh sweet peaches when they are in season but you can certainly substitute canned peaches out of season. The sweet in the recipe title refers to the peaches. With only a half cup of sugar, the cornbread is not overly sweet.

Ingredients
2 large yellow peaches (average weight 5 1/2 oz or 156g)
1 cup or 125g all-purpose flour
1 cup or 180g fine yellow cornmeal
1/2 cup or 100g sugar
2 teaspoons baking powder
1/2 teaspoon fine sea salt
1 cup or 120ml buttermilk, at room temperature
1/2 cup or 113g butter, melted and cooled
2 large eggs, at room temperature

Method
Slice one of the peaches and roughly chop the other one. (The sliced will bake on top of the cornbread, the chopped will go in the batter.) Sprinkle one tablespoon of the sugar each over both peaches and set aside.



Preheat the oven to 350°F or 180°C and grease a 9x9 inch or 23x23cm baking pan or line it with baking parchment.

In a large bowl, whisk together the flour, cornmeal, baking powder, the balance of the sugar and salt.



In a separate mixing bowl, whisk together the buttermilk, cooled butter, eggs and vanilla.

Pour any juice that has formed in the chopped peach bowl into the wet ingredients and stir those peaches into the dry ingredients bowl to coat them with flour. This will help keep them in the batter instead of sinking to the bottom of the cornbread.





Fold the wet ingredients into the dry ingredients until just mixed.



Pour the batter into the prepared baking dish and spread evenly.



Arrange the sliced peach on the top of the batter. Drizzle on any juice that formed in the sliced peach bowl.

Bake for 35-40 minutes, or until a knife inserted into the center of the cornbread comes out clean.

Allow to cool slightly before slicing and serving.

Margy's Best Banana Bread #BakingBloggers

Plain or toasted, it is the perfect snack at the office or at home. This one-bowl recipe makes clean up a breeze, easily done even as the loaf is baking in the oven. It goes great with both a hot cup of tea or coffee. And honestly, even a cold glass of milk.


Back before my mom retired, her boss used to bring this freshly baked banana bread into their office and everyone would clamor for a slice. They all insisted that she share the recipe as well. It was that good.

My mom raved to me about it as well, so of course, I needed the recipe too. I don’t often bake banana bread because of the problem I talked about when I shared my light and fluffy banana cake recipe. Didn't stop me from wanting a tried and tested recipe though. That's how I roll.

Bottom line, it took me years to get around to making this and now I regret all the wasted years in between.

Margy’s Best Banana Bread 
This one-bowl recipe makes clean up a breeze, easily done even as the loaf is baking in the oven. It goes great with both a hot cup of tea or coffee. And honestly, even a cold glass of milk. My mother loves it toasted and slathered with butter.

Ingredients
6 tablespoons or 85g butter, plus extra for greasing loaf pan
1 cup or 200g sugar
2 eggs
2 large ripe bananas, mashed with a fork
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups or 190g flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup or 60ml sour cream

Method
Grease and flour loaf pan (or line it with baking parchment) and preheat your oven to 350°F or 180°C.

Beat together butter and sugar until fluffy and light yellow. Add the eggs, bananas, vanilla and salt.



Combine the dry ingredients in a sieve and sift them into the butter mixture, alternating with sour cream, ending with the last of the dry ingredients.


Stir well in between each addition to combine.



Pour the batter into your prepared pan.



Bake in your preheated oven for 50-55 minutes or until the banana bread is golden and a toothpick comes out clean.

Cool completely before slicing to serve.

Soy Braised Pork with Eggs #FoodieExtravaganza

Many years ago when we were living in the small oilfield town of Macaé, Brazil, one of my close neighbors was a Singaporean woman named Millie. Our girls were about the same ages and we hit it off immediately over a love of cooking. Millie only had to make this dish once and I was hooked!

Sadly, I don’t think I ever got her recipe, or perhaps I misplaced it because I distinctly remember making it way back then.

Once the internet became a thing, I would occasionally search for soy sauce pork with eggs. I always thought of it as a Singaporean dish, and I really didn’t remember what Millie called it, which made it tricky to find online. None of the recipes I found seem quite right. Whether that was my faulty memory is up for debate.

I finally decided I was just going have to do a mash up of several to make what I did remember. But at least with all the research, I now know what to call it.

Braised Soy Sauce Pork with Eggs

The easiest way to slice the pork into very thin pieces is to freeze the pork loin first. Take it out to thaw and use a sharp knife to slice it as thinly as you can while it’s still quite frozen.

Ingredients
For the marinade:
4 tablespoons dark soy sauce
2 tablespoon light soy sauce
2 tablespoon Shaoxing wine

For the braised pork:
2 lbs or 900g pork loin
10 cloves garlic
1 thumb-sized piece ginger
1 tablespoon canola or other light oil
3 star anise
2 to 3 whole cloves
2 sticks cinnamon, 3 inches in length
1 teaspoon black (or mixed) peppercorns
1 teaspoon Chinese 5 spice powder
4 tablespoons dark soy sauce
2 tablespoons light soy sauce
2 tablespoons sugar
1 tablespoon oil
2 cups or 480ml water
6 hard-boiled eggs

Optional to thicken sauce:
2 tablespoons cornstarch

To serve:
Steamed rice
Green onion tops for garnish

Method
Use a sharp knife to cut your pork into thin slices. (See tip above the ingredients list.)



In a large bowl, mix the marinade ingredients: dark soy sauce, light soy sauce and Shaoxing wine. Pile the pork in and use your clean hands to turn the slices in the marinade until they are all well coated.



Cover the bowl with cling film and pop it in the refrigerator for about 30 minutes.

Meanwhile crush and roughly chop the cloves of garlic and peel and mince the ginger. I also find it helpful to measure out the other liquid ingredients into a measuring cup or bowl so I can pour it in all at once when needed.



In a heavy based pot, heat up the cooking oil. Add the star anise, cinnamon sticks, peppercorns, and five-spice powder. Fry till fragrant, about 2-3 minutes. Add in the garlic and ginger and fry for a few more minutes.



Turn the heat up to high and add the marinated pork and any marinating liquid that wasn’t absorbed by the meat. Cook for about 5 minutes, stirring regularly.



Add dark soy, light soy and sugar.


Add 2 cups or 480ml of water. Mix well and bring to a slow boil.

Lower the heat to simmer and cover the pot. Braise for about 20 minutes. Add the eggs in and turn them to coat with the sauce. Tuck them into the pork as much as possible.



Braise, covered, for another 20 minutes more or until pork is tender. If your eggs aren't deep enough, you will want to turn then halfway through to get proper color on all sides.

If desired, you can thicken the sauce with 2 tablespoons of cornstarch thinned with a couple of tablespoons of cold water. Remove the eggs from the pot with a slotted spoon, so you don’t break them up by stirring.

Add the cornstarch slurry to the pot and cook on medium high until thickened about 5 minutes.

 Pop the eggs back in. Sprinkle with chopped green onions.

Pineapple Zucchini Muffins #MuffinMonday

This recipe was inspired by a recipe I found online a few years ago for a zucchini pineapple loaf. I thought it might well work, with modifications, for muffins.

Pineapple Zucchini Muffins

Use pineapple in unsweetened juice for this recipe. If you can only find pineapple in syrup, drain the syrup and adjust the sugar in the recipe to compensate.

Ingredients
2 cups, shredded, or 300g zucchini
10 oz or 280g crushed pineapple in juice, drained
1/2 cup or 120ml canola or other light oil
2 eggs
2 teaspoons vanilla extract
2 cups or 250g flour
1 1/2 cups or 300g sugar
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Method Preheat your oven to 350°F or 180°C and prepare your 12-cup muffin pan by greasing it or lining it with paper muffin cups.

Whisk together the zucchini, pineapple, canola, eggs and vanilla into a large mixing bowl.


In another smaller bowl, whisk together the dry ingredients: the flour, sugar, baking soda, cinnamon and baking powder

Fold the wet ingredients into the dry until just mixed.


Divide the batter into the prepared muffin pan. Bake for 20-25 minutes or until a toothpick comes out dry.

Remove from the oven and cool on a wire rack.
